Nine-year statistics of Czech honey carbohydrate profiles in the Czech Republic

Honey is composed mainly of carbohydrates which are represented by mono-, di-, tri-, tetra-, pentasaccharides, and oligosaccharides. The content proportions individual reveal information about the origin technological properties honey. A total 5 987 samples natural honeys originating from Czech Republic harvested during a period nine consecutive years were analysed to research their carbohydrate content, sum fructose glucose (Fru + Glc), ratio (Fru/Glc), electrical conductivity (Ec). Monosaccharides, melezitose (Mel), Ec varied according source nectar or honeydew. Sucrose (Suc) was low 0.87 ± 1.26 g (100 g)–1 did not exceed 15 g)–1.
